Hungarian Goulash is a hearty, flavorful stew made with beef, onions, paprika, and a variety of spices. Here’s a classic recipe for you:
Ingredients:
- 2 lbs (900g) beef chuck, cut into 1-inch cubes
- 2 tbsp vegetable oil
- 2 large onions, finely chopped
- 3 cloves garlic, minced
- 2 tbsp sweet paprika
- 1 tsp caraway seeds
- 1/2 tsp ground cumin
- 1/4 tsp ground black pepper
- 1/4 tsp cayenne pepper (optional, for heat)
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 cup water
- 2 large potatoes, peeled and diced
- 2 carrots, peeled and sliced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 tbsp white wine vinegar or apple cider vinegar
- Salt, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Brown the Beef: Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove the beef and set aside.
- Sauté Onions and Garlic: In the same pot, add the onions and cook until they are soft and translucent, about 5-7 minutes. Add the garlic and cook for another minute.
- Add Spices: Stir in the paprika, caraway seeds, cumin, black pepper, and cayenne pepper (if using). Cook for another minute until fragrant.
- Add Tomato Paste: Stir in the tomato paste and cook for 2 minutes.
- Simmer the Stew: Return the beef to the pot and add the beef broth and water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
- Add Vegetables: Add the potatoes, carrots, and bell peppers. Continue to simmer for another 30-40 minutes, until the vegetables are tender.
- Finish and Season: Stir in the vinegar and season with salt to taste. Adjust the seasoning as needed.
- Serve: Garnish with chopped parsley and serve hot with crusty bread or over egg noodles.
Enjoy your comforting bowl of Hungarian Goulash!
